Hi John T!
It has been my experience that beef ribs are just as juicy and tender as pork when prepared and smoked properly. I will grill pork ribs from time to time however, I suggest only smoking beef ribs. I good rub works best for me and an even 185-200 degree heat for 4 hours or so. They should just about fall off the bone. Let me know if this works for you.
