This cooker is the one we call the "Old Beast". This cooker was originally made for cooking pigs. When we got a hold of it, the bottom was rusted out and we had plans for using it to do large rib competitions. A new bottom put into it and some new racking, we were good to go! For Easter I was bound and determined to smoke something for dinner. I had a turkey and a ham in the freezer but both got the "meh" from the family so that meant I needed to go on a meat hunt. Recently there was a friendly challenge put forth to cook a Porterhouse steak. Me being me, I could not let the challenge of cooking a Porterhouse steak go unanswered. It's a namesake sort of thing.

Although, I love this cut of meat. The cost makes me shy away from it often. Besides, when you get used to making the cheap ones taste great it's hard to justify the expense.
